Fermentation as a Cooking Method

The primary benefit of fermentation is the conversion of sugars and other carbohydrates into preservative organic acids, like converting juice into wine, grains into beer, carbohydrates into carbon dioxide to bread, and sugars in vegetables.

NAT 2.0

In my diet, I had way to much Na (sodium). If this continues for the five years, I will always be dehydrated and will have extremely high blood pressure. Having high blood pressure is bad because it increases the risks of heart attacks and can cause kidney diseases. To lower blood pressure, i need to eat less sodium and exercise more.
